Around the world in 10 pancakes

It’s that marvellous day of the year again, Nation with the homely smell of frying butter, and the gentle sound of sizzling batter in a pan, delightfully transforming egg, flour and milk into a scrumptious base for an abundance of delicious toppings.

Associated with Shrove Tuesday for the egg, milk and sugar ingredients that are traditionally given up during the fasting season ‘Pancake Day’ is a truly wonderful excuse to gorge on stacks of rich, buttery, discs of delight!

Whether you like to play it safe with a traditional lemon and sugar accompaniment, or enjoy the more adventurous items such as chocolate chips and mint or sticky caramel apple, pancakes are a perfect wholesome treat enjoyed around the world.

1. French Crêpe
Large, thing pancakes are flipped and cooked on both sides before being folded over sweet fillings such as fruit and chocolate or savoury cheese and sautéed vegetables. The batter includes the traditional components of flour, sugar, egg, and milk.

2. American Pancakes
If you like your pancakes light, fluffy and pocket-sized then America has what you need. Served as a stack with sweet toppings and fruit fillings, these saucer-shaped treats are often enjoyed as a dessert or with crispy bacon and maple syrup for breakfast.

Baking powder or beaten egg whites are mixed into the batter, which is dropped into an oiled pan a ladleful at a time and cooked in batches.

3. Korean
If you’re not much of a sweet tooth and prefer the savoury option, Korean pancakes are created using finely sliced vegetables, shredded meat or pan-fried seafood. Often served with dipping sauce, these pancakes (known as Jeon) are eaten as a starter or snack.

4. Australian Pikelets
In Australia, the small and thick pancakes called pikelets are popular as a snack or are served with afternoon tea. Pikelets can also be purchased ready-made in grocery stores, and heated up or served cold. Toppings often include sweet jam and whipped cream.

5. Greek Tiganites
These light, crispy medallion-sized pancakes are delicious when served with honey or petimezi, you can also find them topped with syrup and preserves. Eaten as a sweet snack, breakfast, or as a brunch dish, Tiganites are a favourite during The Great Lend, containing no eggs or dairy products.

6. German Pancakes
German pancakes were gifted with the adorable name ‘Dutch Babies,’ by the USA, and are a mouth-watering addition to your Shrove Tuesday tradition.

These bowl-shaped popovers are made when pancake batter is poured into a cast-iron pan over the stove, and the baked in the oven. This helps the batter puff up like a Yorkshire pudding! They are then finished off with a sweet filling such as apple or a savoury topping like cheese.

7. Scottish Pancakes/ Drop Scones
Scotch pancakes, also known as drop scones, are similar in size and shape to American pancakes. They are typically spread with butter and jam, like toast, and make a delicious tea time treat.

8. Italian Crespelle
The Italian take on a crêpe is a crespelle, often made using chestnut flour instead of all wheat. They can be rolled and stuffed with savoury fillings such as cured meats, vegetables and cheese.

9. Austrian Kaiserschmarrn
Named after the Kaiser Franz Joseph I of Austria, the Austrian Kaiserschmarrn is more than a bit of a mouthful! It’s fluffy pieces of caramelized pancake can be eaten with raisins, apples, nuts and other sweet ingredients.

10. Indian Dosa
The Dosa is a traditional pancake in South India and are thin, savoury delicacies made up from fermented rice and lentil batter. When stuffed with spicy potato curry they become a masala Dosa.
